This Indian sweet delicacy is very popular and is prepared for almost every festival and occasion. There are several variations of this dish and every region in India has a unique way of making this dish. Prepared using sooji, sugar, ghee, green cardamom and garnished with almond, this easy recipe makes for a nice evening snack or can also be relished after an elaborate meal as a dessert. In fact, Sooji Halwa is an inseparable part of Indian culinary heritage as it is offered as a prasad to deities during several festivals and pujas are incomplete without this sweet delicacy. Ingredients for Sooji Halwa:
- 2 cup semolina
- 1 cup ghee
- water as required
- 2 cup sugar
- 1/2 tablespoon powdered green cardamom
For Garnishing
- 1 tablespoon chopped almonds
Method:
Step 1 Cook sooji in ghee
To start making this recipe, keep a pan on a low flame add ghee to it. When ghee melts completely, add sooji and fry until it turns light brown in colour.
Step 2 Prepare sugar syrup
Meanwhile, heat another pan over low heat. Add water to it and let it boil. When it starts boiling add sugar and stir well.
Step 3 Mix sooji and sugar syrup and garnish with dry fruits
When semolina (sooji) turns light brown, add green cardamom powder and sugar solution to it. Stir well until sooji combines with the mixture. Lastly, garnish it with almonds and serve hot.
