Pav Bhaji Masala Recipe

Preparation time 10 minutes

Ingredients
For Pav Bhaji Masala
30-35 gm Dry red chilli,
50-55 gm Coriander seeds,
15-20 gm Cumin seeds,
10-15 gm Fennel seeds,
10gms Cinnamon stick,
10 gm Black cardamom seeds,
5 gm Bay leaf,
10 no Cloves,
10 gm Black peppercorn,
2 no Star anise,
3-4 no Green cardamom,
5 gm Salt,
5 gm Dry ginger powder,
10-15 gm Dry mango powder,
5 gm Turmeric powder,
½ tsp Asafoetida,
½ Nutmeg,

Process
For Pav Bhaji Masala
Heat a pan on low heat and add dry red chilli, coriander seeds, cumin seeds, fennel seeds, cinnamon stick, black cardamom seeds, bay leaf, cloves, black peppercorns, Star anise, green cardamom, salt and roast them until fragrant
Remove in a bowl then add dry ginger powder, dry mango powder, turmeric powder, asafoetida, nutmeg and let it cool.
Then grind it into a powder and sieve it through a medium sieve. Set aside for further use.
