Mixed Vegetable Recipe

Ingredients

  • 100 gm paneer
  • 1 onion
  • 1/4 cup peas
  • 1/4 cup chopped cauliflower
  • 1 teaspoon red chilli powder
  • 1 teaspoon dry mango powder
  • 1/4 teaspoon garam masala powder
  • 1/2 teaspoon mustard seeds
  • 2 tablespoon vegetable oil
  • 1/2 teaspoon turmeric
  • 1 carrot
  • 1 capsicum (green pepper)
  • 10 green beans
  • 2 baby corn
  • 1 teaspoon coriander powder
  • 1/4 teaspoon asafoetida
  • 1/2 teaspoon cumin seeds
  • salt as required
  • 2 tablespoon coriander leaves

Method

  • Step 1 Chop the veggiesFirstly, chop all the veggies like onion, carrot, capsicum, cauliflower, baby corn, beans into small pieces and set them aside. Also, chop the paneer into small cubes.
  • Step 2 The preprationHeat oil in a pan. Add asafoetida, cumin seeds and mustard seeds. Let them splutter for a minute. Now add chopped onion and saute them for a few minutes until they turn golden. Now add all the veggies like carrot, capsicum, cauliflower, baby corn, beans and peas.
  • Step 3 Add the spicesAdd salt, red chilli powder, dry mango powder, coriander powder, turmeric and give a nice mix. Now add 1/4 cup water. This will prevent the veggies from becoming too dry and will produce steam which will quickly cook the veggies. Cover the pan with a lid for 6-8 minutes.
  • Step 4 Add paneerNow open the lid, add paneer cubes, garam masala and give a gentle mix. Cook for another 5 minutes and switch off the flame.
  • Step 5 Ready to be servedGarnish the dish with chopped coriander leaves and serve.
