Mexican Fried Rice Recipe

Ingredients

For Fried Rice 

Oil – 2 tbsp

Garlic, chopped – 2 tbsp

Onion chopped – ⅓ cup

Carrots chopped – ¼ cup

Corn niblets, boiled – ¼ cup

Rajma, boiled – ¼ cup

Capsicum, chopped – ¼ cup

Oregano, dried – 1 tsp

Coriander powder – ½ tsp

Cumin powder – ½ tsp

Kashmiri chilli powder – 1 tbsp

Tomato puree, fresh – ½ cup

Salt – to taste

Boiled rice – 3cups

Tomato, chopped – ¼ cup

Coriander chopped – ½ tbsp

Sugar – ½ tsp

Olives – handful

Jalapenos – chopped – 1 tbsp

Lemon juice – 1 tbsp

Coriander chopped – handful

 

For Mexican Tomato Salsa

Onion, chopped – ¼ cup

Green chilli, chopped – 1 tsp

Tomato puree, chunky – ¾ cup

Salt – ½ tsp

Coriander chopped – handful

Tomato ketchup – 3-4 tbsp

Lemon juice – 2 tbsp

Process

1.If you are using any non-stick utensil to toss rice then chances are that it will stick to the vessel. So to make it non-stick, simply heat the kadai or any vessel that you are using to very high heat. Add 2-3tbsp of oil and let it smoke. Turn around the vessel to make sure that oil is coated on all sides. Turn off the heat and using a clean cloth rub that oil on the inside of the vessel. That is it the vessel is non-stick for one time cooking.

2. For Mexican Fried Rice: Heat a kadai and add oil and once the oil is hot add garlic and onions and give a quick stir. Add in carrots, boiled corn, boiled rajma (kidney beans), capsicum and stir them around for 30 secs.
Sprinkle oregano, coriander powder, cumin powder, chilli powder and freshly made tomato puree. Cook the spices and tomato so that the raw flavors get rounded. While cooking sprinkle some salt to taste and then add boiled rice to it.

3.On top of the rice add some chopped tomato, coriander, salt, olives, jalapenos, lemon juice and then using a flat stirring spoon and mix them up. Cook for 3-4 mins and sprinkle some more freshly chopped coriander. Check for seasoning and adjust. Mexican fried rice is ready, serve it hot.

4.Tomato Salsa Sauce: In a clean bowl add onions, green chilli, tomato puree, salt, coriander, tomato ketchup and lemon juice. Check for seasoning and adjust. Tomato salsa is ready, serve it with Mexican style fried rice.
